Quick And Easy Oven-Roasted Tomato Recipe

If you’ve grown tomatoes, you will know what it is like to have an abundance of delicious tomatoes to eat suddenly. Of course, you do not need to grow your own to make this quick oven-roasted tomato recipe. This recipe is super easy to prepare and quick to cook. Roasted tomatoes with herbs and garlic can be served with pasta, added to grilled meats, side dish with your brunch eggs, or make salsa. There are endless ways you can add the roasted tomatoes to a meal from ready to use fresh tomato sauce with your pasta to tasty homemade healthy tomato soup! See below for serving suggestions.

Use any tomatoes, Italian plum or Roma tomatoes for instance. We also grow Black Krim heirloom tomatoes, large beefsteak tomatoes with a smoky flavour – tasty and perfect for this type of dish. And you can use any herbs with this oven-roasted tomato recipe. It is best to use woody herbs like thymes or rosemary. But any herbs you have will impart a wonderful flavour. The aroma, when roasting the tomatoes with herbs and garlic, is just fantastic. I don’t know anyone who can resist being drawn into the kitchen to see what’s cooking!

Ingredients Needed

Tomatoes (as many as you can fit into a roasting pan)

A handful of herbs (for example, thymes or rosemary)

4 or 5 garlic cloves

Olive oil

Salt and pepper

Steps Taken

  1. Preheat the oven to 200C (400F).
  2. Slice tomatoes in half. Remove the stems and place them in a roasting pan sliced side up. If using cherry tomatoes, leave these whole.
  3. Remove the skin from the garlic and add to the tomatoes in the roasting pan. If the garlic is large, slice in half.
  4. Add your herbs and drizzle with olive oil.
  5. Add salt and pepper to taste.
  6. Roast for 45 minutes. If cooking small tomatoes with thin skins, you may want to reduce to 25 minutes.
  7. Remove from the oven and discard the herbs. Leave to cool.
  8. Store in the fridge for one week in an air-tight glass jar. Or keep in the freezer for a couple of months until you are ready to use your roasted tomatoes.

Quick Homemade Tomato Sauce

For a tasty and quick homemade tomato sauce, liquefy the roasted tomatoes and garlic in a blender. It should make a thick sauce. Heat this sauce in a pot on the stove with about half a cup of cream (optional). Add a few basil leaves, salt and pepper to taste. Serve hot over pasta, grilled meat, or with tacos.

The taste and simplicity of this homemade tomato sauce for any pasta dish is pure perfection with a wholesome rich flavour.

Easy Homemade Tomato Soup

For an easy to make homemade tomato soup, use the liquefied thick tomato sauce (see above) to make a healthy and super tasty tomato soup. Heat the thick tomato sauce in a pot on the stove and chicken or vegetable broth together. The amount of broth you add to the sauce is to your taste. Perhaps start with a 1:1 ratio and go from there.

We like to add fry onions, celery, and any other vegetables for a chunky tomato soup. Salt and add black pepper to taste, and a dollop of sour cream to serve. For a classic Italian inspired soup, add farfalle pasta (also known as bowtie pasta), orzo or tortellini.
